  2. Heat oil in a pan and fry 500 gm of brinjal
  3. Fry until it turns little glossy, remove in a plate, and keep them aside
  4. In the same pan, add 2 tsp of fine chopped garlic and fry until golden brown and add 2tsp of jaggery
  5. Mix well, stir fry for 2 - 3 mins, add 2 large tomato puree mix well cook for 5 min on medium flame
  6. Add 3 tsp of chilli paste and add salt to taste
  7. Add 2 tsp of tamarind pulp mix well, cook for 2 to 3 mins
  8. Adf fried brinjals mix well nicely, so that the gravy cores the brinjal properly cook for 20 mins.
  9. Now the fried brinjal sweet n sour curry is ready to eat with biriyani or rice or chappathi

We loved the smooth, rich flavour. Where I live its hard to find good curry, so I have to make do with what ever I can find. Chutney is another product hard to find, infact i could'nt find it, but the receipe turned out good anyways. Sweet 'n Sour Badane Palya -stir fried eggplants/aubergine cooked with tamarind and jaggery. Tondekai/Tindora Palya -Simple and quick stir fry of Sweet and Spicy Peas Curry - Dried green and yellow peas cooked in sweet, sour and spicy tomato and tamarind gravy.
