  1. Get 1 lb ground turkey
  2. Prepare 1 cup diced yellow onion
  3. Take 1 zucchini shredded (be sure to squeeze out excess water)
  4. Prepare 1 celery stalk finely chopped
  5. Prepare 3 carrots, finely sliced
  6. Take 1 cup diced red bell pepper
  7. Get 1/2 cup diced mushrooms
  8. Take 4 garlic cloves, minced
  9. Prepare 3/4 cup rolled oats
  10. Prepare 2 tablespoons tomato paste
  11. Prepare 1/2 cup fresh parsley, finely chopped
  12. Make ready 2 eggs, lightly beaten
  13. Take 1/2 teaspoon paprika
  14. Prepare 1 teaspoon salt
  15. Take 1 teaspoon pepper
Instructions to make Turkey and Vegetable Meatloaf:
  1. Preheat oven to 350 degrees. Coat loaf-sized baking pan/dish with olive oil or nonstick cooking spray.
  2. Heat skillet with olive oil and sauté onion 3-5 minutes.
  3. Add in carrots, celery and bell pepper, and cook an additional 3-5 minutes.
  4. Add in zucchini, mushroom and garlic for another 3 minutes.
  5. In a large bowl, combine the turkey, oats, parsley, eggs, tomato paste, paprika, salt and pepper. Fold in veggies.
  6. Place into pan in a loaf shape.
  7. Bake until brown 1 hour or so.
  8. Remove from oven and let stand for 15 minutes.
  9. Cut into 8 slices (2 slices = 1 serving).
