The ingredients needed to make Veggie Lasagna:
  1. Take 1 medium onion
  2. Prepare 2 clove garlic
  3. Get 2 tbsp olive oil
  4. Make ready 2 cup spinach
  5. Get 1 medium egg
  6. Make ready 2 tbsp Italian spice blend
  7. Get 2 cup mozzarella cheese
  8. Get 12 whole grain lasagna noodles
  9. Prepare 2 cup pasta sauce
  10. Make ready 2 cup frozen vegetables
Instructions to make Veggie Lasagna:
  1. Cook whole grain lasagna noodles according to the package instructions.
  2. Saute the onion and garlic in oil over medium high heat. Add veggies and saute until tender. Add spices. Set aside.
  3. Whisk egg into 1 cup of cheese and stir in fresh spinach.
  4. Pour a little sauce in the bottom of a greased 9x13 pan.
  5. Top with 4 lasagna noodles,1/2 cup cheese mixture, ½ of the veggies, and ¾ cup sauce. Repeat.
  6. Top entire pan with noodles, remaining sauce, and cheese.
  7. Cover with tin foil and bake for 40 minutes at 375°F. Remove foil and bake for 10 minutes more or until cheese is bubbly.
